The Bikini Cocktail

Serves 10 people

Ingredients for the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Premix (yields 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Citrus Syrup: Place the listed components into a saucepan, heat until it reaches a simmer, mixing so the sugar melts. Next, take off the heat and leave to reach room temperature completely. Transfer to a sealable bottle, cap it and store chilled, it will last for around a month.

To make Premix: Pour the specified liquids into one large bottle, let it rest for 60 minutes, then filter it preferably using a fine cloth, to ensure it's completely strained.

When ready to serve: Add 85ml from the batch mix to a mixing glass containing ice, and agitate carefully for one minute until cold. Pour to a frosted cocktail glass or equivalent, garnish with the cranberries and complete it using a brief mist with the mandarin essence over the top.
